Vegan Cinnamon Rolls from Scratch

I never really liked regular conventional cinnamon rolls because I always found them so sweet ๐Ÿ˜

Don't get me wrong, I LOVE sweets but I'm talking like the excessive, synthetic fake flavor kind.

So, today I was craving something sweet and I got the idea of trying to make vegan cinnamon rolls in a healthier way and vegan.

Here are the ingredients:


*White all purpose flour

*Active dry yeast



*Coconut oil

*Vanilla extract


*Homemade date paste

*Crushed pecans


*Melted coconut oil

Literally, that was it!

And the flavor was AMAZING! ๐Ÿคฉ

You don't even need to add icing and with a cup of almond milk, it was delicious! ๐Ÿ˜‹

The recipe is broken down in 3 steps:

Let's start with Step 1:


300 g of white all purpose flour

200 g of water

1 packet of active dry yeast

1/4 cup of melted coconut oil

1 tbsp of vanilla extract

A pinch of salt

Mix dry ingredients (flour, active dry yeast, salt) with a fork and then add the wet ingredients (water, melted coconut oil, vanilla extract).

Mix well until sticky, sprinkle some flour and knead the dough for 5 minutes, and then allow to rest for 1 hour.

Once rested, sprinkle some flour and roll out the dough to a thick pan size and then cut into 1" strips. Sprinkle some flour and set aside.

Step 2: Make the filling


12 medjool dates with pits removed

1/4 cup of water

3 tablespoons of melted coconut oil

1 cup of pecans

2-3 tablespoons of cinnamon

Make the dates into a paste by boiling the pitted dates with the 1/4 cup of water until they are soft and mushy. (It is important that you keep an eye on this and do not allow to overburn). Set aside and allow to cool.

Once cooled, mix the dates up with the water, add the pecans, cinnamon, and melted coconut oil.

This is the filling. Set aside.

Step 3: Bake

Get a large baking sheet and grease the pan with a thin layer of coconut oil. Start assembling each cinnamon roll by spreading it out and spreading the filling on each piece evenly and smoothly. Then roll it up into the iconic cinnamon roll shape. The recipe makes at least 6 so maybe invite some friends over?
