Gluten Free Vegan Banana "Bread" Pudding

Growing up, I loved bread pudding. My grandmother, may her soul rest in peace, made the BEST Mexican Capirotada. Unfortunately, we've never been able to reproduce the magic she made, but her memory will forever rest in our souls. There was always so much joy in the home when she cooked. I guess that's one of the reasons why I love cooking.


As a result, I've created this simple gluten free, vegan delicious recipes that will for sure leave your belly content.


Ingredients
4 ripe bananas
1 cup of ground oats
1 cup of unsweetened plain almond milk
1 tbsp of vanilla extract
1/4 cup of raisins
1 cup of walnuts
1 cup of ground chia seeds
1/4 cup of maple syrup
A can of sweetened condensed coconut milk (you won't use all of it. It will be used as a topping once the bread pudding is done).

Instructions

  1. Measure out a cup of traditional oats and place them into the coffee grinder to make into a flour.

  2. Place the oat flour aside. Then measure out a cup of chia seeds, and also grind in a coffee grinder.

  3. In a large mixing bowl, place all of the ingredients, instead of the sweetened condensed coconut milk and mash everything together until pretty mashed.

  4. Allow to sit aside for 15-20 minutes.

  5. Preheat the oven to 350° F.

  6. Open the can of condensed coconut milk and set aside.

  7. After the 20 minutes, place the mixture into a deep dish baking pan. It is important to ensure the mixture is leveled out to about 1/2 - 1 inch. A more thin layer is more slightly crispy texture.

  8. Bake for 40 minutes. (You can bake for longer if you prefer a more crispier consistency).

  9. Once done, take out of the oven and allow to cool.

  10. Once cooled, it is ready to be served and topped with some delicious sweetened condensed coconut milk.
