A Simply Curried Tofu Recipe

I LOVE Curried food! I honestly joke with my husband all of the time about how I truly believe that I was Indian in a past life. My dream is to go to Asia, specifically the Hyderabad region of India and try authentic biriyani. But that's a story for another time. This recipe was inspired by my love for Asian food and the variety of delicious Asian flavors. Also, it is extremely easy and cheap to make.


Without further Ado, here's the recipe:


Ingredients
1 tsp of garlic powder
1 tsp of black pepper
1 tsp of Chile/red pepper flakes
1 tsp of curry
1/2 tsp of turmeric
1 raw white onion, diced
1 tbsp of raw ginger, minced
4 cloves of raw garlic, minced
1 package of frozen vegetables (I chose the Aldi's brand of Asian stir fry vegetables)
2 cups of cooked brown rice
2 tbsp of soy sauce
1 box of extra firm tofu, cut in squares
2 tbsp of the oil of your choice
Water as needed for sauce

Instructions

  1. In a bowl, mix the soy sauce, spices, ginger, garlic, and add maybe 1/4 cup of water.

  2. Ideally, if you have time to allow the tofu to marinate in this juice overnight that would be awesome. If not, you can still use this sauce. Place the cut tofu in the sauce and allow some time (~15 minutes) to marinate.

  3. In a hot pan, heat the oil.

  4. Cook the onions for 3 minutes.

  5. Then add in the tofu and sauce. Mix thoroughly for another 3 minutes.

  6. Add in the frozen vegetables until warm, and then add in the cooked brown rice.

  7. Mix together and wait until heated up.

  8. Then it is ready to serve! This recipe serves 3 people.
