Simple, cheap, easy, and quick is my motto when it comes to making recipes.
Cooking with foods like quinoa, peanuts, and frozen peas definitely fit in this criteria.
Here is a very simple yet ABSOLUTELY satisfying vegan quinoa stir fry.
1 whole bag of frozen peas
1/4 cup of unsalted roasted peanuts
1 medium onion chopped
4 tbsps of Coconut oil
2 tbsps of soy sauce
2 tbsps of Epicure's Asian Stir Fry Seasoning
1 large piece of ginger (~2 tbsp) minced
2-3 cups of cooked quinoa
1 raw carrot, peeled and sliced
Fresh radishes as desired ( this will simply be an add on)
On a frying pan on medium heat, add the coconut oil and wait until heated.
Saute the frozen peas and peanuts until the frozen peas are mostly cooked.
Add in the onion and ginger and cook until the onion is translucent.
Add in the cooked quinoa, the soy sauce, and The epicure Asian stir fry seasoning and mix and cook until heated which should be within a minute or two.
Then voíla! Your dish is ready to be served with raw carrots and radishes. Buen provecho!
